Spiced Smoked Orange Bourbon Ice Cream

3 cups heavy cream

1/2 cup Bang Candy Spiced Smoked Orange Simple Syrup

1/2 cup sugar

1/4 cup bourbon

pinch salt

8 egg yolks

In a medium saucepan, combine 2 cups cream, simple syrup, sugar, bourbon and salt. Heat over medium low, whisking slowly until sugar has dissolved and cream is warm. Remove from heat and cool to room temperature. Whisk egg yolks in a medium bowl. Slowly add cream mixture to egg yolks, whisking constantly. Return cream/egg mixture to saucepan and heat over medium low, stirring constantly with a rubber spatula. Once custard has thickened enough to coat the spatula, remove from heat. Pour custard through a fine mesh strainer into remaining cup of cream. Stir and refrigerate in airtight container until cold. Freeze in ice cream maker according to directions.
